A delightful recipe for snowball shortbread cookies with orange zest and vanilla, perfect for holiday baking. The cookies are coated multiple times in powdered sugar after baking.
1. Using an electric mixer, start by creaming the butter and powdered sugar.
2. Add your orange zest and vanilla extract to your butter and sugar mixture. Then slowly start incorporating your orange juice 1 tablespoon at a time.
3. In a separate bowl combine your flour, almond meal, baking powder, and salt.
4. Slowly incorporate your dry mixture into your wet ingredients.
5. Press dough between your hands to form tablespoon size balls and place on a parchment lined baking sheet.
6. Bake at 350°F for approximately 20 minutes until just golden around the edges.
7. Remove from baking sheet and set cookies on a cooling rack for approximately 10-15 minutes.
8. Once the cookies have cooled slightly, drop them in powdered sugar to coat. I like to coat mine 2-3 times. Then return to cooling rack and allow to cool completely before placing in an airtight container.
