20 mins prepServes 10
Easy Easter Nest Chocolate Peanut Butter Cookies, perfect for using up store-bought dough or making from scratch. Filled with peanut butter goodness and topped with mini M&M eggs.
To prepare the peanut butter cookie dough from scratch: In a medium bowl, cream together the melted butter, brown sugar, and powdered sugar until smooth. Stir in the peanut butter, egg yolk, and vanilla until well combined. Gradually mix in the flour until a cohesive dough forms.
Alternatively, you can use store-bought peanut butter cookie dough for convenience.
Preheat your oven to 350°F (175°C). Be sure to use mini muffin liners before adding the cookie dough to a mini muffin tin to make these easy to remove.
Roll the dough into approximately 10 small balls and place one in each muffin liner. If using Mini Reese's PB Cups, you can press one into the center of each cookie dough ball before baking.
Bake at 350°F for approximately 6-8 minutes.
Remove from the oven and immediately place mini peanut butter M&M eggs in the center of each warm cookie, pressing down gently to create a 'nest' effect.
Allow cookies to cool completely in the muffin tin before removing them to prevent breakage.
