Shortcut Lemon Sugar Cookie Bars

Prepare the Betty Crocker sugar cookie mix according to package instructions, adding a dash of vanilla. Once the cookie dough is made, reserve 1/8 of the mixture. Press the remaining cookie dough into a parchment-lined baking sheet. Top this layer with 10 ounces of lemon curd. Take your reserved cookie dough and mix it with 1/4 cup of flour to form a crumble. Spread this crumble mixture evenly over the lemon curd layer. Bake at 350°F (175°C) until the edges are golden brown, which will be approximately 30 minutes. Be sure to allow the bars to cool completely before cutting them into squares and topping with powdered sugar. Enjoy!
