Spaghetti Carbonara!

Begin cooking your pancetta over medium heat until the fat renders and they get brown and crispy. Once cooked, turn heat off and leave pancetta and fat in the pan. In a mixing bowl combine eggs, cheese, and freshly ground black pepper, and whisk together. Cook your spaghetti noodles until al dente. When pasta is done cooking, immediately place into your sauce pan and pour the egg mixture on top. Using a wooden spoon or spatula mix the pasta and egg mixture together for several minutes. The heat from the pasta will “cook” the eggs creating a creamy sauce. Add in some reserved pasta as needed to help bring sauce together. Serve immediately and top with some extra cheese and black pepper!
